Completing the ServSafe® Food Protection Manager Course means taking part in one of the most highly regarded training programs in the retail food industry. The course is an excellent foundation for food protection managers, and includes expertly designed training activities. A well-illustrated book and additional materials are available before the class date to help in learning, and ProSystems EnviroHealth L.L.C. tailors the training to each student's learning style.
New Jersey Administrative Code 8:24 requires that food establishments such as full-service restaurants, diners, cafeterias, catering establishments, healthcare or childcare food service operations, and similar food-preparation facilities, have at least one person in charge with a current food safety certificate, obtained through passing an approved food protection manager course examination. The New Jersey Department of Health states that the ServSafe® Food Protection Manager certification is one of the programs that has the necessary Conference for Food Protection approval for meeting this requirement.
Food safety principles that apply to each activity from purchase through the serving of food are presented in the course. Among the topics are: types of food hazards and their prevention; personal hygiene; safe food preparation; cross-contamination; time and temperature control; use of thermometers; cleaning and sanitizing; pest management; food security; equipment and facility programs; Active Managerial Control and HACCP; and food safety regulations and inspections.
The course is offered in an eight-hour and a 16-hour format. To aid in learning, the course book and other materials can be provided to the student for study before the class start date. Those registering need to consider their previous level of training as well as requirements of the local health department when deciding whether to take the eight-hour or the 16-hour course. Customized formats with additional hours also can be provided.
A five-year certificate is issued to the student upon completing the course and passing the course examination with a grade of 75 or higher.
The standard course fee includes the training, the sixth edition of the book for the course (ServSafe® Manager), additional training materials, the course examination and certificate, and refreshments.
ProSystems EnviroHealth L.L.C. provides the ServSafe® Food Protection Manager Course at convenient locations. Additional course dates at suitable locations may be scheduled at the client's request. Training is available weekdays, weeknights and Saturdays, and can be scheduled as either convenient multi-day sessions or as an entire day.
ServSafe® training is conducted at facilities that comply with Americans with Disabilities Act requirements, including wheelchair accessibility.
